Chickpea + Quinoa + Kale Bowl

This is such an easy and satisfying lunch or dinner! Packed with plant-based protein, fiber, and healthy fats, you will feel satiated and replenished after this bowl. It’s easy to multiply so feel free to make a big batch and your lunch is basically meal prepped for the week. This recipe keeps well in the fridge bc the kale and quinoa are both so hearty. If you need more protein, I recommend grilled chicken or fish to top.

Also, this is highly customizable. Instead of olive oil, you could use avocado oil. Instead of raw bell pepper, use jarred roasted red peppers. Don’t like kale? Try arugula or your fave salad mix! Don’t like sundried tomatoes? Blasphemy… those are my favorite part. But you could use halved cherry or grape tomatoes instead. A handful of slivered almonds or maybe toasted walnuts would be good, too. The sky’s the limit here. The end goal is to have a variety of textures and flavors so you get some creamy and some crunch.

Chickpea & kale Quinoa Bowl

Makes 2 servings

1/4 cup uncooked quinoa
1 cup chickpeas
3 cups kale greens
1/2 red bell pepper, chopped
1/4 cup julienned sundried tomatoes
15 kalamata olives, chopped
1 shallot or 1/4 red onion, minced
1/2 avocado
1 lemon
2 tsp olive oil
1 tsp garlic powder
1 tsp paprika

Cook 1/4c of quinoa on the stovetop (makes about 1/2c cooked) and stir in some garlic, paprika, salt & pepper. Once it’s cooked and cooled down for about 5 minutes, mix in kale greens, kalamata olives, sundried tomatoes, chickpeas, bell pepper, and shallot.

Seasoned with juice of one small lemon and olive oil. Then more salt & pepper to taste.

That will make about two bowls so either give one to your partner/roomie or put it in a tupperware for tomorrow :) Then right before eating, top it with 1/4 diced avocado and a chopped stalk of green onion! That's it!

You can serve it warm (like I did yesterday when I made it) as a grain bowl or chilled out of the fridge like a salad (especially if you throw in another handful of kale greens or maybe some arugula), which is my lunch plan today.
