Sunny Springtime Scramble
This is an easy and flavorful recipe perfect for any morning. You’re getting a good dose of greens plus plenty of protein and healthy fats to keep you full. As with any of my egg scrambles, I like to work with what I have on hand - so if you have some leftover roasted vegetables, salad greens, etc. feel free to throw them in here as well!
As someone who avoids dairy (I love cheese more than I like most people, but as I’ve gotten #old it gives me worse and worse stomach probs… bop) I love using nutritional yeast for both a nutty, cheesy flavor and an extra splash of protein, vitamins, and minerals. If you’re not a fan of its taste or texture, feel free to sub in your favorite cheese… or just leave out all nutritional yeast/cheese entirely!

Sunny Springtime Scramble
Serves 1 - you can easily double or triple this to feed the whole fam.
Ingredients:
1 tsp avocado oil
2 eggs
1/4 white or yellow onion
1c broccoli florets (keep them on the smaller side for thorough cooking)
1c kale greens
1 chicken sausage, cut into 1/2” coins
1/4 avocado, sliced
1 tbsp nutritional yeast
1/2 tsp turmeric
1/2 tsp paprika
sea salt & fresh cracked black pepper!
Add avocado oil to small skillet over medium heat. Sauté onion, broccoli florets, kale greens, and sausage for 8-10 minutes.
While veg and sausage are cooking, scramble two eggs with a splash of milk or water plus some salt & pepper, then pour them into the skillet after the 10 minutes of sautéing is up.
Season with a few generous shakes of nutritional yeast, turmeric, and paprika while you scramble together. Plate your eggs and top with another shake of nutritional yeast, pepper, salt, and avocado!
